Butternut Squash Apple Soup Recipe
Ingredients:
  • 1 medium yellow onion,
  • 1 celery rib, chopped
  • 1 carrot, chopped (about 3/4 cup)
  • 2 Tbsp butter
  • 1 butternut squash, peeled and chopped
  • 1 tart green apple
  • 3 cups chicken stock
  • Pinches of nutmeg, cinnamon, cayenne, salt and pepper
  • water
Instructions:
Heat a large pan on medium flame and melt the butter and let it foam up and recede. Now add onion, carrot and celery and saute. Add the butternut squash, apple, broth and water. Reduce the flame and close it with a lid. Use an immersion blender to purée the soup. Add nutmeg, cinnamon and cayenne. Now you can add salt and pepper to taste.
