Onam Special Aviyal

Prep Time: 15 minutes

  • Cucumber - 1 cup
  • Snake gourd sliced- 1 cup
  • Carrot -1
  • Drumstick -2
  • Beans -6-7
  • Raw bananas -1
  • Mango pieces
  • Turmeric powder-1/2 tspn
  • Grated coconut - 1 cup
  • Green chillies-4 no
  • Cumin seeds-1/2 tsp
  • Curry leaves
  • oconut oil
Cut all the vegetables and grind coconut, green chillies and cumin seeds. Keep it aside. In a thick bottom vessel, heat 2tbs coconut oil. Then add vegetables and cook in a low flame. After it is half cooked , add turmeric powder, salt and mix it well. Remove the vegetables from the middle and put sliced bananas and mango pieces and cover it with the other vegetables. When steam comes out, add the coconut paste and stir well. Next you remove it from the fire. Put curry leaves in the avial.
