- Rub :
- Ground Cumin - 2 teaspoons
- Ground Cinnamon - 1/2 teaspoons
- Kosher Salt - 1 1/2 teaspoon
- Chicken :
- Whole Chicken - 1-2 Kg depends on consumption
- Olive Oil - 1 tablespoon
- Glaze :
- Apricot Glaze - 80 ml (1/3 cup)
Mix the Cumin, cinnamon and salt in a small bowl & Rub together the spices over the chicken.After loosely covered the chicken with rub, marinate it for overnight or at least for an hour.Preheat the oven at 375 degree F and place the chicken over the roasting pan and rub the olive oil over the chicken and bake it for 50 minute at 375 F.While baking the chicken make apricot glaze by heating the preservatives in a small saucepan. Remove the chicken from oven after 50 minutes and brush the apricot blaze over the chicken and again bake the chicken at 400 degree F for 10 minutes. Remove the chicken from oven and let rest for 15 minutes before serving.
